Nicholas Priedite is the chef/owner of Priedite Barbecue in Los Alamos, CA. He has learned the barbecue traditions from pit masters and cooks across the country, from California to South Carolina. With a focus on live fire barbecue and cooking, Priedite Barbecue draws a focus on the offset barbecue pits of Texas and the direct heat pits of Santa Maria. In an effort to carry the traditions of American barbecue while seeking seasonal and local meats and produce, Nicholas offers the nostalgia of old-school wood fired techniques with modern cooking approaches.
