Alessandra Spisni is an Italian chef and the founder of the cooking school La Vecchia Scuola Bolognese in Bologna, dedicated to teaching traditional Bolognese and Italian cuisine. A respected master pasta maker sfoglina, she is known for preserving and promoting the art of artisan pasta making through her school and mentorship, having passed down her techniques to chefs like Evan Funke. Spisni is also a brand ambassador for Tantos, a snack company that makes puffed pasta chips, which started from a personal passion project.
