Chef Fatima Juarez creates food rooted in the flavors she grew up with in Mexico City. Her deep love for corn shines through her menu, where she highlights the grain’s versatility by working with more than 22 heirloom varieties. Fatima partners directly with families in Mexico who cultivate and preserve these rare varieties. Alongside her husband, Conrado, she was part of the opening team at Holbox, the Michelin-starred marisquería, where she was responsible for starting their inhouse masa program. Beyond Holbox, she supplies wholesale masa to eight restaurants across Los Angeles, including the Patina Restaurant Group’s three concepts in Downtown Disney. Since its opening last year, Komal has been awarded a Michelin Bib Gourmand and Best New Restaurant of 2025 by Bon Appétit.
